Date Nut Cookies

2 cups pitted dates
2 cups flour (divided)
½ tsp. salt
1 tsp. pumpkin pie spice
1 cup brown sugar
1 tsp. vanilla
½ cup chopped pecans
½ tsp. soda
½ cup butter
1 egg
½ cup buttermilk
Slice dates; dredge with 2 Tbsp. of the flour. Mix remaining flour with salt, soda and pumpkin pie spice. Cream butter and sugar. Add egg and vanilla. Beat well. Add flour mixture alternately with milk. Stir in dates and pecans. Drop by teaspoonfuls onto greased baking sheets. Bake at 375˚F for 8-10 minutes.
