Rhubarb Crunch

1 cup brown sugar
1 cups flour
¾ cup oats
½ cup butter
1 Tbsp. cinnamon

8 cups rhubarb, diced or 6 cups rhubarb and 2 cups strawberries
¾ cup sugar
2 Tbsp. cornstarch
¼ cup water

Throughly mix first 5 ingredients and press half this mixture into greased 9 x 13″ pan. Cook ¾ cup sugar, cornstarch and water to boiling. Add rhubarb and stir. Spread on first mixture in pan. Top with remaining crumbs and bake at 350ºF for 1 hour. Serve with ice cream.

Apple Crisp

4 cups sliced apples (golden delicious or Macintosh are good) about 4 medium
½ cup brown sugar
½ cup flour
½ cup quick oats
1/3 cup butter, softened
¾ tsp cinnamon
¾ tsp nutmeg

Heat oven to 375º F. Arrange apples in greased square pan, 8×8x2 inches. Mix remaining ingredients; sprinkle over apples.

Bake until topping is golden brown and apples are tender, 30-45 minutes. Serve warm with ice cream.

Apple Pinwheel Cobbler

2 cups flour
1 Tbsp. sugar
2 tsp. baking powder
½ tsp. salt
¾ cup butter
½ cup milk
2 Tbsp melted butter
4 cups grated apples
½ cup sugar
1 tsp. cinnamon

Combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse meal. Stir in just enough milk to make soft dough. Roll out on lightly floured board. Brush with butter. Spread apples evenly over dough; sprinkle with sugar and cinnamon. Roll up from long side. Cut into 1 ½ inch slices. Arrange in 9×13 inch pan. Top with hot orange sauce. Bake at 400°F for 40 minutes. Serve with whipped cream.

Orange Sauce
2 cups sugar
½ tsp. cinnamon
½ cup butter
2 cups water
½ cup orange juice

Bring to boil and simmer 5 minutes.
