Brownie Fruit Dream

½ cup butter, softened
2 eggs
3 Tbsp. water
1 tsp. Vanilla
¾ cup flour
1/3 -1/2 cup cocoa
¼ tsp. Salt
1 cup sugar
1 cup cream
10 strawberries
3 kiwi

Cream butter, eggs, water and vanilla. Add dry ingredients and mix. Spread in greased 8-inch square cake pan. Bake at 325º for 25-30 minutes. Cool completely.

Whip cream. Wash strawberries, remove stems and slice. Peel kiwi and cut into pieces. Serve brownie pieces with whipped cream and fruit. 4-6 servings.

Blueberry Dessert

30 large marshmallows
1 cup milk
1 ¼ cup flour
½ cup brown sugar
½ cup butter, softened
2/3 cup chopped pecans (optional)
1 cup cream
½ tsp. almond extract
1 can blueberry pie filling*

Dissolve marshmallows in milk. Cool until COLD.

Combine flour, brown sugar, butter and nuts. Pat in 9×13 inch pan and bake at 400°F until light brown. Cool.

Whip cream and add extract. Fold cream into cooled marshmallow mixture. Crumble the cooled crust mixture. Put ½ in bottom of pan and press. Put 2/3 marshmallow mix over crumbs in pan. Spread blueberry filling on marshmallow layer. Then spread remaining marshmallow mixture and sprinkle with remaining crumbs. Refrigerate.

Note: If using your own blueberries, cook 2 cups blueberries with ½ cup sugar and ¼ cup water and 1 Tbsp. tapioca. Cook until thickened. Cool.

Apple Squares

1 cup flour
1 tsp. baking powder
½ tsp. salt
½ tsp. cinnamon
½ cup butter
½ cup brown sugar
½ cup sugar
1 egg
1 tsp. vanilla
½ cup chopped apple
½ cup nuts

Melt butter in saucepan. Remove from heat. Beat in eggs, sugar & vanilla. Stir in dry ingredients, apple and nuts. Spread in 8×8 inch pan. Sprinkle with cinnamon-sugar. Bake at 350°F for 45 minutes. Cool completely before cutting.

Chewy Chocolate Chip Squares: Add ½ cup chocolate chips.

Date Bars

Date Filling (below)
1 cup brown sugar
3/4 cup butter, softened
1 ¾ cup all-purpose or whole-wheat flour
1 tsp. salt
½ tsp baking soda
1 ½ cups quick-cooking oatsPrepare Date Filling. Heat oven to 400°F. Mix brown sugar and butter. Mix in remaining ingredients. Press half of the mixture in greased 13×9x2 inch pan; spread with filling. Top with remaining crumbly mixture, pressing lightly.

Bake until light brown, 25-30 minutes. Cut into bars, about 2×1½ inches, while warm. 3 dozen cookies.

Date Filling:
Heat 1 pound dates, cut up (about 3 cups), 1 ½ cups water and ¼ cup sugar over low heat, stirring constantly, until thickened, about 10 minutes; cool.

Chocolate Oatmeal Bars

Makes about 2 1/2 dozen bars

1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 1/2 teaspoons vanilla extract
1 egg
1 1/4 cups quick or old-fashioned oats, uncooked
2 cups (11 1/2 ounce package) milk chocolate chips
3/4 cup finely chopped walnuts (optional)

Combine flour and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in oats, 3/4 cup chocolate chips and 1/2 cup nuts. Spread into lightly greased 13 x 9 inch baking pan.
Bake in preheated 350 F oven for 22 to 28 minutes or until center is set. Immediately sprinkle with remaining morsels; let stand for 5 minutes or until chocolate chips are shiny. Spread morsels; sprinkle with remaining nuts. Cool in pan on wire racks.
